Whole-grain Applesauce Muffins

Last night my roommates and I were in a minor car accident.  We are incredibly grateful that the accident wasn’t worse.  Other than a little soreness, we are all okay.  Needless to say, though, I was in the mood for something comforting this morning.  I decided to bake muffins (which, as you may not know yet, is one of my favorite things to make.  I’m slightly obsessed).

I saw Joy the Baker’s recipe the other day, and immediately knew it was for me!  I adapted it slightly according to my tastes and what I had on hand.  They smelled delicious in the oven (actually, they smelled delicious even in batter form) and turned out quite nicely.  There’s definitely nothing pretentious about these muffins–the ingredients are quite simple–but that’s what I needed today.

At the risk of sounding melodramatic, let me say that I am counting my blessings today.  I’m remembering the ones that I love.  I’m sitting back and enjoying a new morning.  Though these muffins certainly don’t solve the world’s problems, they are a comfy-cozy way for me to begin the day in peace.

Whole-grain Applesauce Muffins
makes 1 dozen

Preheat oven to 375 degrees.  Prepare 12 muffin cups.

1 cup + 2 tablespoons whole-wheat flour
2 tablespoons wheat bran
1 1/4 cup quick oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon nutmeg

Combine dry ingredients in a large bowl. 

1/2 cup unpacked brown sugar
1/2 cup milk
1 teaspoon lemon juice
1 cup unsweetened applesauce
2 tablespoons butter, melted
1 large egg, beaten

 Combine wet ingredients in a separate bowl.  Add to dry ingredients.

Fill muffin cups.  Bake 18-20 minutes.
